Comforting Cheesy Sri Lankan-Inspired Omelette

Ingredients

  • 4 medium eggs
  • 1 Garlic clove
  • Cumin
  • Turmeric
  • 1 onion
  • Salt
  • Ground peppercorn
  • Vegetable oil
  • Spinach
  • Cheddar cheese

Method

Dice the onion and garlic, then add them to a saucepan with a dash of vegetable oil over medium heat. Cook until soft and golden brown.

In a bowl, whisk together the eggs with turmeric, cumin, ground pepper, a pinch of salt, and chopped spinach.

Once the onions and garlic are golden, grate some cheddar cheese into the saucepan, covering the whole surface area.

Pour in the egg mixture, making sure it spreads evenly across the pan.

After about 3 minutes, grate more cheddar cheese over the top. Transfer the saucepan under a preheated grill to cook the top for another 3 minutes, or until golden and set.

Carefully place a plate over the pan and flip the omelette onto it. Serve with a handful of fresh spinach drizzled in olive oil, if desired.

Tips For Affordability:

  • Use frozen spinach
  • If you don’t have a grill, simply cover the pan with a lid for the final 3 minutes to cook the top of the omlette
  • No fuss version: Vegetables are fab, but this omelette holds its own with just turmeric and spinach — a budget-friendly leafy green that packs a healthy punch.
